Apple Pie

Pastry for 2-crust pie
6 cups pared, sliced tart apples [I used a combination: Pink Lady, Golden Delicious, etc.]
3/4 cup sugar
1 tablespoon cornstarch
1 teaspoon cinnamon [I also added some nutmeg]
2 tablespoons butter

Line a 9-inch pie pan with pastry. Fill with apple slices. In a bowl, combine sugar, cornstarch and cinnamon. Sprinkle over apples. Dot with butter. Cover with slit pastry [the second crust with slits cut in it, or a lattice crust]. Seal edges. Bake at 400ยบ for 45 to 60 minutes.
