Cherry

Berry or Cherry Pie with Frozen Fruit

Preheat oven to 450º.

Line a pie pan with crust.

Mix and let stand for 15 minutes:
2 packages frozen berries or cherries—20 ounces—defrosted enough so that the fruit separates easily [I used frozen dark, sweet cherries...bad choice...everything but the flavor was perfect, so use tart cherries]
3 tablespoons quick-cooking tapioca
1/2 cup sugar
1/8 teaspoon salt
2 tablespoons melted butter

Fill the pie shell. Cover with crust or lattice and bake in a 450º oven for 10 minutes. Reduce the heat to 350º and bake for 45 minutes to 1 hour.
