Squash (or Sweet Potato, Yam, Pumpkin, etc.) Pie
Prepare unbaked crust for a 9-inch pie.
Mix together:
• A small squash (or two or three sweet potatoes or yams or a small pie pumpkin), baked and mashed/pureed—enough to equal about two cups
• 1 1/2 cups evaporated milk
• 1/2 cup brown sugar
• 1/4 cup white sugar
• 1/2 teaspoon salt
• 1 teaspoon cinnamon
• 1/2 teaspoon ginger
• 1/8 teaspoon cloves [can omit]
• 4 slightly beaten eggs
• 1 teaspoon vanilla
Pour into the pie shell. Bake at 425º for 15 minutes, then at 350º for 45 minutes or until filling has set. Serve with whipped cream.
